Edier and Fabian Vargas are the two brothers behind this washed Pink Bourbon. They ensure production and processing are held to the highest quality standards, by doing all the work themselves, with the help of their two other siblings.  
 
This lot went through a 50-hour aerobic fermentation in cherry plus a 50-hour aerobic fermentation depulped. The result is a deliciously complex, vibrant and sweet cup!

  • Roaster's Notes

    Edier and Fabian bought this 1-hectare plot in 2017, when they saw the opportunity to grow quality coffee at a very high elevation. They now grow coffee where a couple of decades prior would have been completely impossible to do so. Frosts still happen frequently, which is the main risk for their crop, as it can stop the growth cycle of the fruit and create big production losses. Last occurrence of frost was in June/July 2023, resulting in the loss of more than half of the production.

    The bothers now have their own plant nursery, where we’re growing various rare coffee varieties. They also plan to build their own wet mill and drying structure in the near future.
